Detox Diary – Day One

It’s no secret that I couldn’t go the whole five days on the juice cleanse a few weeks ago! However it did give me a huge appreciation for food & inspired me to eat less meat & less dairy. I like the idea of healing my stomach troubles with proper nutritious food. So with these thoughts in mind, I decided to conduct my own little experiment & create a detox for myself based on what I know is good for my body. No dairy, no wheat products, no gluten, no refined sugars, no meat! The idea is to ease digestion & give my stomach a bit of a vacay! However my detox is including: fruit, lots of veggies (especially the green leafy variety) & lots of spices! So without further a-do here is my diary for today.

So what did you eat…

Breakfast – Banana pancakes, well actually they’re more like sweet omelettes! You will find the recipe below.

Snack - 1 large wedge of seedless watermelon

Lunch - Salad! Broccoli, cabbage, carrot, apple & shallots mixed with lemon quinoa & topped with avocado.

Snack - Handful of brazil nuts

Dinner – Homemade pumpkin & ginger soup topped with a few pine nuts for added crunch.

Dessert - 1 cup peppermint tea & small serve of choc coconut mousse.

So did you exercise…

YES! I woke up this morning & did a few yoga poses and light stretches, I then jumped on the tread mill for 20 minutes. Afterwards I stretched once again & then laid out on my yantra mat for 15 minutes. Currently I can’t do anything too strenuous as I’m experiencing knee troubles (so frustrating) but any movement is better than none at all.

I’m thinking that tomorrow I’m going to make a beautiful homemade tomato & basil soup for dinner. I can’t wait to share the recipe with you all!

Sweet Banana Omelette

What you’ll need:

1 Ripe banana
2 eggs
2 tsp Hazelnut meal (could use almond meal)
1/2 tsp pure vanilla bean paste
1/2 tsp cinnamon
1/2 tsp nutmeg
Spray coconut oil (for cooking)

What to do:

1. Mash banana well with a fork, stir in remaining ingredients. Combine well.
2. Heat a little coconut oil in a frypan over a low-medium heat.
3. Pour in half the mixture, cook until bubbles appear. Flip & cook other side.
4. Repeat with the remaining mixture.
5. Serve with fresh berries and another sprinkle of cinnamon.
